The word biscotti is a generic term denoting various types of Italian cookies. The term biscotti is plural for biscotto, which can be translated as “twice” (bis) + “cooked” (cotto). They are baked once as a log, sliced and baked a second time to eliminate moisture content. This creates a delicious, extra-crisp cookie with a long shelf life. They complement coffee, tea, milk, hot chocolate, wine, fruit, ice cream and yogurt. Traditionally an Italian classic, biscotti date back to the 13th century. Even Christopher Columbus is said to have relied on biscotti on his long sea voyages. However, today’s versions are far more sophisticated. This traditionally simple cookie has been redefined. Variations today are endless and often include nuts, dried fruit, and of course, chocolate.
